"Note di Bianco" from Alessandro Viola is a captivating natural white wine from the rugged northwest coast of Sicily, crafted by the visionary winemaker Alessandro Viola at his small, organic estate near Alcamo in the province of Trapani. Made from 100% Grillo grapes—an indigenous Sicilian variety known for its resilience and expressive character—this wine falls under the Terre Siciliane IGT appellation. Grown on clay-limestone soils at elevations between 250-700 meters, the vines benefit from cool sea breezes and intense Sicilian sunshine, lending the wine a vibrant freshness and subtle minerality.
True to Viola’s minimalist philosophy, "Note di Bianco" is produced with a hands-off approach: hand-harvested grapes undergo spontaneous fermentation with native yeasts in stainless steel tanks, followed by six months of aging on the lees to enhance texture and depth. Unfined, unfiltered, and typically free of added sulfites (though some vintages may see a minimal 20 mg/L at bottling for stability), it pours a pale, slightly hazy straw color, reflecting its raw, unadulterated nature. The nose is bright and inviting, with aromas of ripe pear, white peach, and citrus zest, interwoven with delicate floral notes—chamomile or wildflowers—and a saline, Mediterranean breeze. On the palate, it’s crisp and zesty, offering a juicy core of stone fruit, a touch of almond skin bitterness, and a refreshing, mineral-driven finish that lingers with a hint of sea salt.
