Bichi "Pet-Mex" is a vibrant and refreshing natural sparkling rosé wine from Tecate, Baja California, Mexico, produced by the Téllez family—Noel and Jair Téllez, along with their mother Ana Montaño—at their pioneering winery, Bichi. Launched in 2014 with the collaboration of Chilean natural wine expert Louis-Antoine Luyt, this pét-nat (pétillant naturel) is made from a mysterious, unidentified grape variety grown on a dry-farmed, own-rooted vineyard planted in 2003. Located near the Pacific Ocean at 1,066 feet above sea level in San Antonio de las Minas, the vines thrive in sandy loam and granite soils, contributing to the wine’s distinctive mineral character.
The winemaking process is minimalist and true to Bichi’s natural ethos—meaning "naked" in the Yaqui dialect, a nod to their unadulterated style. Hand-harvested grapes are destemmed and pressed after a few hours of skin contact, just enough to impart a delicate salmon-pink hue. Fermentation begins spontaneously with native yeasts in stainless steel tanks, and the wine is bottled before fermentation completes, allowing a secondary fermentation in the bottle via the ancestral method to create its fine, lively bubbles. It’s bottled unfined, unfiltered, and without added sulfites, resulting in a slightly cloudy, authentic expression.
In the glass, "Pet-Mex" reveals a hazy, pale coral color with gentle effervescence. The nose is subtle yet enticing, offering aromas of grapefruit, guava, and fresh bread, with a saline minerality tying it to its coastal origins. On the palate, it’s dry and crisp, with fine bubbles carrying flavors of tart citrus, tropical fruit, and a refreshing, zesty finish. At around 11-12% alcohol, it’s light and crushable, embodying the "vin de soif" (thirst-quenching wine) ideal.
This pét-nat pairs wonderfully with sushi—especially Mexican-style rolls—or pastor tacos, its acidity cutting through rich flavors with ease. Serve it well-chilled at 8-10°C for maximum enjoyment. "Pet-Mex" showcases Bichi’s mission to revive Baja’s old vineyards and highlight Mexico’s underrated winemaking potential, all wrapped in a playful package—complete with luchador-inspired labels—that’s as fun as it is delicious.
