Emerging from the sun-drenched, high-desert expanses of Castilla-La Mancha in central Spain, the Gulp/Hablo Vamos Red by Bodegas Parra Jiménez is a spirited, low-intervention red blend that encapsulates the Parra brothers’—Francisco, Javier, and Luis—dedication to vibrant, biodynamic wines from their 445-acre Demeter-certified estate, Europe’s largest organic vineyard. Rooted in La Mancha’s colorful scarplands, where chalky clay soils peppered with heat-retaining pebbles (like those in the Cuesta Colorá vineyard) nurture old vines, this family-run operation integrates sheep grazing, Manchego cheese production, and organic garlic fields into a harmonious, sustainable cycle. Part of the Gulp/Hablo lineup launched in 2021 for unpretentious, liter-sized “gulpability,” the Vamos Red—a blend dominated by Tempranillo with splashes of Morenillo, Garnacha, and other native grapes—is crafted with natural wine maestro Juan Antonio Ponce. Hand-harvested at dawn, whole-cluster grapes undergo wild-yeast fermentation in stainless steel and concrete, with minimal sulfur and no fining or filtering, yielding a lively, unpolished red at 12.5% ABV that pulses with La Mancha’s raw, sun-soaked energy.Vivid ruby with a translucent edge in the glass, it bursts with a fragrant rush of ripe red berries—strawberry, raspberry, and red cherry—mingled with juicy plum, wild thyme, and a peppery kick, grounded by earthy clay notes and a chalky, saline minerality. On the palate, it’s light, crunchy, and irresistibly quaffable—low-tannin with a bright snap of tart cranberry, blackberry, and savory herbs, driven by zesty acidity and a subtle, gravelly grip that finishes with a refreshing, faintly effervescent lift. Serve slightly chilled (12–14°C) to amplify its vibrancy, pairing it with tapas like patatas bravas, chorizo skewers, grilled veggies, or a smoky paella.
