"Une Tranche Made in Chénas" from Louis-Damien Bouchacourt is a captivating natural wine born from a collaboration with the legendary Beaujolais winemaker Philippe Jambon. Hailing from the Chénas appellation—the smallest cru in Beaujolais—this 100% Gamay is sourced from Bouchacourt’s organically certified vines, planted on granite and alluvial soils near La Chapelle de Guinchay since he established his domaine in 2014. Hand-harvested in early September, the grapes undergo a semi-carbonic maceration with a mix of whole clusters and destemmed fruit, fermenting spontaneously with native yeasts in concrete vats. The wine is then aged for an extended period—often three years—in a combination of vats and barrels, before being bottled unfined, unfiltered, and without added sulfites. The result is a rich, balanced red with a deep ruby hue, offering a bouquet of ripe cassis, raspberry, and floral notes like rose and violet, underscored by subtle spice—think licorice or white pepper. On the palate, it’s fruit-forward yet structured, with silky tannins, a vibrant freshness, and a textured finish that speaks to its meticulous crafting. Perfect with roasted meats or aged cheeses, this Chénas showcases the unsung potential of its terroir and the pure, soulful artistry of two masters at work.
