Cantina Giardino "Adam" is a compelling natural orange wine produced by Antonio and Daniela De Gruttola at their winery in the Irpinia hills of Campania, Italy. Crafted from 100% Greco grapes sourced from vines over 80 years old, planted at an altitude of 500 meters in Taurasi, this wine embodies the couple’s commitment to organic farming and minimal intervention winemaking. The volcanic soils and high elevation of the region lend a distinctive minerality and vibrancy to the fruit, which is tended by hand to ensure quality and express the unique terroir.
The winemaking process for "Adam" is both traditional and unadorned. The Greco grapes undergo a spontaneous fermentation with native yeasts, macerating on their skins for four days to extract color, texture, and flavor, resulting in its characteristic orange hue. Following fermentation, the wine ages for at least one year in used chestnut or acacia casks, allowing it to develop depth and complexity without the influence of new oak. It is bottled unfiltered, unfined, and without added sulfites, preserving its raw, authentic character.
In the glass, "Adam" presents an intense, slightly hazy straw-yellow to amber color, a hallmark of its skin-contact style. The nose reveals a Mediterranean profile with aromas of citrus peel—think orange zest and grapefruit—mingled with honeyed notes, dried stone fruits like peach or apricot, and subtle spicy and mineral undertones, often with a faint iodized or saline edge. On the palate, it’s a powerful yet harmonious wine, offering a rich, textured mouthfeel balanced by vibrant acidity and a touch of tannic grip from the skin contact. Flavors of white fruit, citrus, and a salty minerality unfold, culminating in a long, fresh, and territorial finish.
With an alcohol content typically around 13-13.5%, "Adam" is a versatile wine that shines alongside seafood, fresh cheeses, or hearty dishes like baked cod with chickpeas. It’s best served at 10-12°C after breathing for 15-30 minutes to fully open up its complex profile. Compact and structured, this wine drinks beautifully now but has the potential to evolve gracefully over several years, making it a standout expression of Cantina Giardino’s philosophy of letting the land speak through the glass.
