Le Temps des Cerises "Avanti Popolo" is a vibrant, natural red wine crafted by winemaker Axel Prüfer in the Languedoc region of southern France. Produced under his Domaine Le Temps des Cerises, established in 2003, this wine reflects Prüfer’s commitment to minimal-intervention winemaking and organic farming. The cuvée is typically a blend of grape varieties such as Grenache Noir, Merlot, Syrah, Cabernet Sauvignon, and Alicante, though earlier vintages leaned heavily on Carignan. The exact composition may vary by vintage, but the 2023 iteration, for example, features a mix of 50% Grenache, 14% Syrah, 12% Alicante, 12% Merlot, and 12% Cabernet Sauvignon.
The winemaking process is deliberately hands-off: grapes are hand-harvested from soils rich in decomposed limestone, quartz, and granite, often from vines as old as 90 years. Fermentation occurs spontaneously with native yeasts, with short maceration periods—such as 8 days for Grenache and 10 days for Syrah—while other grapes may be direct-pressed to preserve freshness. The wine is aged briefly, often for about six months, in stainless steel or fiberglass tanks, avoiding oak to let the fruit shine through. It is bottled unfined, unfiltered, and without added sulfites, resulting in a pure, unadulterated expression of the Languedoc terroir.
On the palate, "Avanti Popolo" is light to medium-bodied, offering a lively profile of juicy red fruits—think wild raspberry, cherry, and grilled plum—accented by subtle spice, floral notes, and a touch of earthy herbs or mushrooms. Its low alcohol (typically around 12-13%) and soft, velvety tannins make it exceptionally drinkable, perfect for casual sipping or pairing with charcuterie, grilled vegetables, or lean meats. The name "Avanti Popolo," meaning "Forward, People!" in Italian, nods to a historic labor movement anthem, reflecting Prüfer’s rebellious spirit and East German roots. This wine is a testament to his philosophy of letting the grapes speak for themselves, capturing the essence of a living, biodiverse vineyard surrounded by wildflowers and woods.
