Hervé Villemade Cheverny Blanc is a captivating natural white wine from the Cheverny appellation in France’s Loire Valley, crafted by acclaimed winemaker Hervé Villemade. This cuvée is typically a blend of Sauvignon Blanc (around 70%) and Chardonnay (30%), sourced from organically farmed vines averaging 10 to 25 years old, grown on a mix of terroirs including sand with flint, clay with silex, and deep silt. Villemade, a pioneer of minimal-intervention winemaking, employs organic practices in the vineyard and a gentle, hands-off approach in the cellar.
The wine is made through direct pressing, followed by a cold racking of the gross lees for 18 to 24 hours. Fermentation occurs spontaneously with native yeasts in stainless steel tanks and concrete vats, and after malolactic fermentation, it’s aged on its lees in stainless steel and fiberglass, with only a light earth filtration. Minimal sulfur is added—1g/hL post-fermentation and 1-1.5g/hL at bottling—preserving its vibrant, unadulterated character.
On the nose, expect a delicate bouquet of white flowers, ripe pear, citrus, and subtle almond or stone notes, with hints of minerality from the flinty soils. The palate is fresh and supple, offering a harmonious blend of white and yellow fruits, zesty citrus, and a touch of herbal nuance, like anise or fennel. Firm acidity provides structure, while the Chardonnay lends a rounded, slightly creamy texture, culminating in a crisp, mineral-driven finish. This is a versatile, food-friendly wine—perfect with roast white meats, fresh seafood, or crunchy greens—best served chilled to highlight its lively, thirst-quenching charm.
