"Cosmic Blend" from Les Lunes Wine is a playful and innovative natural red wine that reimagines the classic Bordeaux-style blend with a distinctly Californian twist. Crafted by winemakers Shaunt Oungoulian and Diego Roig at their unique cellar beneath Shaunt’s family home in Orinda, just outside Oakland, this wine is born from organically farmed vineyards across Sonoma and Mendocino Counties. The blend varies by vintage but typically features Cabernet Sauvignon (around 56%), Merlot (11%), Zinfandel (19%), and Pinot Gris (14%), with each grape fermented separately to highlight its individual character before being artfully combined. Using spontaneous fermentation with native yeasts, shorter macerations, and minimal aging in neutral vessels, the wine is bottled unfined, unfiltered, and with only a whisper of sulfur (less than 10 ppm) to preserve its vibrancy. The result is a juicy, medium-bodied red with a translucent ruby hue, bursting with aromas of cassis, blueberry, and mountain berries, accented by subtle herbaceous spice and a forest-floor greenness. On the palate, it’s fresh and fruit-forward, with bright acidity, soft tannins, and a mineral streak that nods to its sunny, coastal-influenced origins. Best served with a slight chill, "Cosmic Blend" pairs beautifully with goat cheese salads or spicy Asian dishes, embodying Les Lunes’ mission to craft balanced, expressive wines that honor California’s winemaking past while pushing its boundaries forward.
