Unlike their eclectic "No Comply" blend, this offering focuses solely on Chardonnay grapes, sourced from organically farmed vineyards in regions like San Benito County or Sonoma County, depending on the vintage. True to their hands-off philosophy, the wine is made with native yeast fermentation, minimal sulfur dioxide (SO2), neutral oak aging, and ambient temperatures, letting the grape’s pure expression take center stage.
This Chardonnay often leans into an orange wine style, with extended skin contact—sometimes up to 19 days—giving it a bright amber hue and a textured, layered profile. Expect aromas of dried citrus peel, apricot, and subtle floral notes, with a palate that balances ripe stone fruit, zesty citrus, and a hint of nuttiness.
