Domaine La Bohème "Môl" is a dynamic and expressive red wine crafted by Patrick Bouju and Justine Loiseau, natural winemaking pioneers based in the Auvergne region of France. This cuvée is a négociant wine, meaning the grapes are sourced from trusted organic and biodynamic growers outside their own 5-hectare estate, often from regions like Beaujolais or the Rhône. The blend typically features a joyful mix of varieties such as Syrah, Grenache, Cinsault, and Gamay, though the exact composition can vary by vintage, reflecting Bouju’s creative and intuitive approach to winemaking.
Produced with minimal intervention, Môl showcases the couple’s commitment to purity and vitality. The grapes, harvested by hand from vines ranging from 20 to over 80 years old, are grown on diverse soils like basalt, volcanic rock, or limestone, depending on the source. Winemaking involves partial destemming and a short carbonic maceration (around 10 days) in fiberglass tanks, followed by spontaneous fermentation with indigenous yeasts for 7-10 days. The wine then ages for about 9 months in fiberglass or stainless steel, bottled unfined, unfiltered, and without added sulfur, preserving its raw, living energy.
In the glass, Môl reveals a bright ruby hue and an aromatic profile brimming with crunchy red and black fruits—think cherry, blackberry, and bramble—layered with hints of baking spice, earth, and a subtle mineral streak. On the palate, it’s light to medium-bodied, with a lively acidity and a touch of funk (sometimes a slight fizz or volatile acidity), delivering a refreshing, juicy texture that’s both structured and approachable. This is a wine that dances between complexity and pure drinkability, embodying the “glou-glou” spirit of natural wine—perfect for casual sipping or pairing with charcuterie, roasted vegetables, or a cozy movie night.
Môl reflects Patrick Bouju’s journey from a sulfur-sensitive chemistry student to a cult figure in the natural wine world, alongside Justine Loiseau’s fresh perspective. It’s a vibrant, budget-friendly expression of their philosophy: let the grapes and terroir speak, unencumbered by additives or heavy-handed technique. Each vintage is a snapshot of their artistry, making Môl a perennial favorite among natural wine enthusiasts seeking something alive and unpretentious.
