Dreamcôte Wine Co. (Brit & Ryan Zotovich) delivers a more structured, barrel-aged expression with this classic Bordeaux-style blend. Sourced from sustainable sites in Happy Canyon—including McGinley and Dierberg Starlane—this 2021 marries Cabernet Franc, Cabernet Sauvignon, and Merlot, then sees time in oak for added depth and polish.

The wine shows dark Catalina cherry, violet, and warm baking spices (clove, cinnamon) on the nose, layered with toasty oak and a touch of sweet fruit. On the palate it’s rich and vibrant at once—structured red fruit, fine tannins, and a balanced, lingering finish that retains the house’s signature freshness despite the traditional styling.

At ~14.1% ABV, this is the more serious, cellar-worthy side of Dreamcôte’s lineup. Excellent with grilled ribeye, herb-roasted lamb, mushroom dishes, or aged cheddar. A thoughtful California take on Bordeaux that drinks beautifully now but has the backbone to develop over the next 5–8 years.
