This organic sparkling white is made using the ancestral method, a traditional technique where fermentation finishes in the bottle, trapping carbon dioxide to create its signature fine bubbles. It’s a blend of indigenous grapes, typically Montuni, Pinot Bianco, and Trebbiano, grown on rocky limestone soils, which lend a distinct minerality to the wine.
Unfined and unfiltered, this wine pours slightly cloudy, a testament to its raw, living character and the lees that remain in the bottle, enhancing its texture and flavor.
