"Il Macerato" from Il Folicello is a captivating orange pét-nat (pétillant naturel) that showcases the innovative and organic ethos of winemakers Marco and Antonella at their estate in Castelfranco Emilia, Modena, within Italy’s Emilia-Romagna region. This sparkling wine is crafted from a blend of local grape varieties—typically Montuni, Pinot Bianco, and Trebbiano—grown on the estate’s certified organic vineyards. The grapes undergo a period of skin maceration, often lasting several days to weeks depending on the vintage, which imparts a distinctive amber hue and a textured, aromatic complexity.
