The winemaking process reflects the Montanet family’s commitment to natural and minimal-intervention practices. The grapes are hand-harvested with careful sorting in the vineyard, followed by direct pressing. Fermentation occurs spontaneously with indigenous yeasts in a combination of stainless steel tanks and oak barrels, and the wine undergoes full malolactic fermentation. "La Piecette" is then aged for 10 to 12 months on its fine lees in well-seasoned oak barrels, a distinctive choice for this cuvée within the domaine’s portfolio. It is bottled unfiltered, with only a modest addition of sulfites—applied after malolactic fermentation and before bottling—to preserve its integrity.
The resulting wine is a luminous expression of Vézelay’s terroir, balancing tension and finesse. It offers a vibrant profile with notes of white fruit (such as pear and peach), citrus (like lemon confit), and white flowers, underpinned by a pronounced minerality that evokes the region’s calcareous soils. While it shares some resemblance to the precision of Chablis, it distinguishes itself with a touch more generosity and roundness, hinting at the charm of Côte de Beaune whites. With a dry profile (residual sugar below 1.2 g/L) and a saline, refreshing finish, "La Piecette" is both approachable in its youth and capable of evolving beautifully over 5 years or more.
