Le Coste Bianchetto is a vibrant natural white wine crafted by Gianmarco Antonuzi and Clémentine Bouveron at their biodynamic estate in Gradoli, Lazio, Italy, near Lake Bolsena. Made from a field blend dominated by Procanico (a local Trebbiano variant) and Malvasia, with traces of other indigenous grapes like Roscetto and Verdello from 20- to 50-year-old vines on volcanic soils, this wine reflects the duo’s hands-off philosophy. The grapes undergo a short 2- to 3-day skin maceration, followed by spontaneous fermentation with native yeasts in stainless steel tanks or fiberglass vats, and a brief élevage of a few months. Bottled unfined, unfiltered, and with minimal or no added sulfites, Bianchetto pours a hazy straw-gold hue. It bursts with aromas of green apple, citrus peel, and wildflowers, with a subtle nutty edge from the skin contact. On the palate, it’s fresh and juicy, with bright acidity, a saline minerality, and a light tannic grip, clocking in at around 12% ABV. This lively, everyday wine pairs wonderfully with seafood, fresh cheeses, or vegetable antipasti, embodying Le Coste’s ethos of pure, terroir-driven simplicity.
