Le Fontane's "Calcis" Terre Siciliane IGT is a luminous, skin-contact white—or gently orange—tinted elixir that embodies the ancient limestone heartbeat of Sicily's southeast, emerging from the Occhipinti siblings' visionary biodynamic estate in Chiaramonte Gulfi, launched in 2022 as a fresh canvas for their COS-honed craft. From a modest 2-hectare parcel in Contrada Le Fontane at 230 meters elevation, these certified organic vines—45% Grillo, 45% Insolia, and 10% Moscato—thrive in the eponymous "calcis" (Latin for limestone) terroir: iron oxide-flecked red-brown sands overlaying a deep stratum of mineral-rich sub-Apennine limestone that retains precious moisture through scorching Mediterranean summers of hot days, cool nights, and scant rain, yielding grapes of poised intensity and saline vibrancy.Hand-harvested in early September via green harvesting and trained on Guyot and spur-pruned cordon systems, the clusters undergo a brief yet transformative skin maceration of 2–3 days (or up to 15 in some lots) with indigenous yeasts in concrete tanks, coaxing golden hues and subtle texture before pressing and spontaneous fermentation. The wine then rests 8–10 months in thick, unlined concrete vessels—masters of thermal stability—followed by 1–2 months in bottle, emerging unfiltered and vegan at a lithe 12% ABV, a testament to minimal intervention and the land's unadorned eloquence.In the glass, it gleams with a radiant golden-yellow sheen, unveiling a bouquet of pristine freshness: delicate floral petals, jasmine whispers, and ripe yellow-fleshed fruits like apricot and peach, laced with hints of citrus zest and wild herbs from the Sicilian maquis. The palate is medium-bodied and elegantly structured, threading vibrant acidity and a saline, mineral grip through layers of textured yellow orchard fruits, subtle tannic finesse, and an earthy undertone, resolving into a refreshingly sapid, lingering finish that evokes sea-sprayed cliffs and sun-warmed stone.
