Le Thio Noots "Chaussée Sauvage" Blanc 2023 is a striking natural wine from the Anjou region of the Loire Valley, crafted by Romain Verger and Lucie Faderne. Made from 100% Sauvignon Blanc sourced from a special parcel of 25- to 30-year-old vines grown on schist and humus-rich soils, this wine reflects the duo’s deep respect for organic farming and minimal intervention. The grapes are hand-harvested, foot-crushed, and undergo a 20-day maceration, followed by a gentle pressing and 9 months of aging in neutral barrels. Bottled unfined, unfiltered, and with zero added sulfur, it embodies a pure, unadulterated expression of the varietal and terroir.
In the glass, it glows a pale gold with a slight haze, signaling its natural roots. The nose is a kaleidoscope of aromas—vibrant citrus like grapefruit and lime zest dances with green apple, white peach, and a savory herbaceous streak, all underpinned by a flinty minerality. On the palate, it’s deep yet citric, with a textured mouthfeel from the extended skin contact, balanced by a crisp acidity that keeps it lively.
