The grapes undergo a two-month whole-cluster maceration, followed by a gentle pressing and 10-month aging in old barrels in the centuries-old cellar beneath their guesthouse, Casa Antolia. Bottled unfined, unfiltered, and without added sulfur, it pours a light ruby hue with a bouquet of ripe red berries—strawberry and cherry—accented by subtle volcanic minerality and a hint of spice.
