The "Sauvignon Blanc/Chardonnay" from Lo-Fi Wines is a compelling and unconventional natural wine that blends two classic varietals into a refreshing, low-intervention expression of Santa Barbara County terroir. Produced by lifelong friends Mike Roth and Craig Winchester, this wine is crafted from organically grown grapes sourced from vineyards like Coquelicot and Oak Savanna in California’s Central Coast. The blend—typically around 54% Sauvignon Blanc and 46% Chardonnay, though proportions vary by vintage—marries the crisp, aromatic zest of Sauvignon Blanc with the subtle richness of Chardonnay. The Sauvignon Blanc is often fermented on its skins for two weeks in open-top fermenters, lending texture and depth, while the Chardonnay may see direct pressing or skin contact, depending on the vintage, and is aged in a mix of concrete eggs, stainless steel, and neutral French oak barrels for six to seven months. Fermentation occurs spontaneously with native yeasts, and the wine undergoes full malolactic fermentation naturally, with minimal sulfur (around 25 ppm) added only at bottling. Unfined and unfiltered, it pours a hazy golden hue, offering a nose of dried herbs, peach, and tropical citrus, followed by a palate that’s crisp yet softly textured—think ceviche-like acidity meets subtle melon and sour candy vibrancy. True to Lo-Fi’s minimalist philosophy, this is an easy-drinking, lower-alcohol wine designed for everyday enjoyment, pairing effortlessly with spicy snacks or a Netflix binge. It’s not over-manipulated or overpriced—just honest, alive, and utterly gluggable.
