MACCIOCCA Monocromo #1 is an intriguing natural white wine crafted by Mario Macciocca at his biodynamic estate in Piglio, Lazio, nestled along the volcanic slopes of the Monti Ernici in central Italy. Made predominantly from Passerina, a local grape variety, with a small addition of Malvasia Puntinata, it’s sourced from vines grown on red volcanic soil at around 380 meters above sea level. The grapes undergo a brief 10-12 day skin maceration, followed by spontaneous fermentation with native yeasts in stainless steel tanks, and are bottled unfined, unfiltered, and with no added sulfites. This minimal-intervention approach yields a hazy, pale gold wine with a delicate yet expressive profile. Aromas of chamomile, toasted hazelnuts, and dried apricot mingle with a whisper of sea salt, while the palate offers a subtle stone fruit character, crisp acidity, and a rocky minerality. At around 12% ABV, Monocromo #1 is light, refreshing, and slightly textured, making it a versatile match for dishes like cacio e pepe, fresh seafood, or vegetable antipasti. A former soccer player turned winemaker, Mario’s dedication to purity and terroir shines through in this understated yet captivating wine.
