Matassa Rouge Coume de l’Olla is a lively and expressive natural red wine from the Roussillon region of southern France, crafted by Tom Lubbe at Domaine Matassa in the village of Calce. This wine is typically a blend of Grenache Noir (around 60%), Grenache Gris (20%), and Syrah or Macabeu (20%), though proportions may shift slightly by vintage. Sourced from 55-80-year-old vines grown on clay-limestone soils in the Coume de l’Olla vineyard—named after a local gully—the grapes reflect the rugged, sun-drenched terroir of the eastern Pyrenees, tempered by organic and biodynamic farming practices certified by Ecocert.
The winemaking is deliberately hands-off: hand-harvested grapes undergo whole-cluster co-fermentation with native yeasts in concrete tanks, macerating for 3-6 days to balance fruit extraction with freshness. After pressing, the wine ages for about 6 months in concrete, then is bottled unfined, unfiltered, and with no added sulfites, preserving its raw, vibrant character. The result is a light- to medium-bodied red with a low alcohol content, often around 11.5-12%.
In the glass, it pours a translucent ruby with a slight haze, hinting at its natural profile. The nose bursts with juicy red berries—think raspberry and sour cherry—layered with Mediterranean herbs, a touch of peppery spice, and a subtle chalky minerality. On the palate, it’s bright and crunchy, with crystal-clear acidity, soft, chalky tannins, and a floral lift that makes it endlessly drinkable. Flavors of red fruit and a hint of wildness dance through a refreshing, mineral-driven finish.
This is a quintessential "glou-glou" wine—perfect for casual sipping, especially when slightly chilled to 14-16°C.
