Milan Nestarec Nach is a vibrant, natural red wine from one of the Czech Republic’s most celebrated winemakers, Milan Nestarec, based in Moravia near the Austrian border. Crafted from a blend of grapes—typically Blaufränkisch (Lemberger), Pinot Noir, and sometimes St. Laurent or Zweigelt, depending on the vintage—it’s a tribute to the juicy, honest reds of Moravia’s past. Sourced from organic vineyards on loess, clay, and sand soils in Velké Bílovice and Moravský Žižkov, the vines range from 5 to 40 years old, tended without herbicides or synthetic inputs since Nestarec shifted to biodynamic practices in 2009.
The winemaking is pure and unfussy: hand-harvested grapes are destemmed, gently crushed, and macerated on skins for a couple of weeks with native yeasts in stainless steel tanks, without temperature control. After fermenting spontaneously, the wine rests for about eight months in neutral oak (often 3000L barrels) or stainless steel, then is bottled unfined, unfiltered, and with no added sulfites. Presented in a nostalgic 1-liter bottle with a crown cap—reminiscent of Czech beer or juice bottles from Milan’s childhood—it clocks in at a light 11-12% alcohol, depending on the year.
Nach, meaning “purple” in Czech, pours a translucent ruby with a playful edge. The nose bursts with bright red and black fruit—think cassis, cherry, and blackberry—accented by herbal spice, a touch of hay, and a mineral whiff from the loess soils. On the palate, it’s light-bodied and zippy, with crisp acidity, mild tannins, and a juicy, slightly funky profile that finishes dry with a hint of black tea or bitter herbs. Milan calls it his “Moravian red realness,” a rejection of the heavy, oaky trends that once overshadowed the region’s traditional style.
Serve it chilled (50-55°F) for maximum refreshment, and pair it with dark chocolate, grapes, pizza, or a casual burger night—it’s built for easy drinking. Nach reflects Nestarec’s irreverent genius, blending millennial wit with deep respect for his roots, all wrapped in a linocut label designed by his wife, Mirka. It’s a liter of pure, unpretentious joy from a winemaker who’s redefined Central European natural wine.
