"Plasma" from Domaine de la Petite Sœur is a radiant and unconventional natural wine crafted by Adrien de Mello at his biodynamic estate in Saint-Aubin-de-Luigné, Anjou, within France’s Loire Valley. This unique rosé is a blend of Cabernet Sauvignon and Sauvignon Blanc, sourced from organic vines rooted in schist-rich soils across his four-hectare vineyard. The Cabernet Sauvignon is direct-pressed for freshness, while the Sauvignon Blanc undergoes a short maceration to lend texture and depth, with both fermenting spontaneously via native yeasts. Bottled unfined, unfiltered, and without added sulfites, "Plasma" pours a lively, hazy pink-orange hue, bursting with aromas of tart red berries, citrus candy, and a subtle floral lift. On the palate, it’s crisp and salivating, with a saline minerality and bright acidity that dances through a playful, refreshing finish.
