"Poil de Lièvre" from Domaine Bobinet is a Loire Valley gem that’s as playful as its name (translation: "Hare’s Fur") suggests. Crafted by Sébastien Bobinet and Émeline Calvez in Saumur, this 100% Chenin Blanc comes from organic vines, 15-35 years old, rooted in the region’s signature tuffeau limestone and clay soils. Harvested by hand, it’s vinified naturally with native yeasts in stainless steel, skipping sulfur additions to let the fruit sing. The result? A crisp, vibrant white bursting with green apple, pear, and Meyer lemon, laced with floral notes and a chalky minerality that’s pure Loire. It’s got a bright, grassy edge and a touch of saline on the finish—perfect for sipping chilled as an aperitif or pairing with grilled fish, shellfish, or fresh goat cheese. Sébastien, an eighth-generation vigneron, and Émeline, a former dancer turned winemaker, bring a dynamic energy to this bottle, making it a cult favorite among natural wine lovers. Grab a glass and hop into this lively Chenin!"
