Swick Cabernet Sauvignon is a distinctive, natural-leaning red wine from the Pacific Northwest, crafted by Joe Swick, a fifth-generation Oregonian winemaker based in Newberg, Oregon. Sourced from certified organic vineyards in Washington’s Columbia Valley—75% from Conley Vineyard in Yakima Valley AVA and 25% from Konnowac Vineyard in Rattlesnake Hills AVA—this 2022 vintage blends Old World finesse with New World flair. The grapes, grown at elevations of 1,600 and 1,100 feet respectively on sandy soils, undergo whole-cluster fermentation for 60 days, a technique inspired by Swick’s time in Barolo, Italy working with Nebbiolo. This semi-carbonic process slows fermentation, yielding a lighter color and an elegant, less extracted style compared to typical Cabernet Sauvignons.
Aged for 14 months in neutral French oak barrels (228L and 500L), the wine sees minimal intervention—native yeasts, no fining or filtration, and just a small dose of sulfur at bottling. At 13% ABV, it pours a translucent ruby and offers a nose of dark cherry, tobacco, and pencil lead, with a palate that’s lively yet refined, balancing black currant, spice, and a subtle herbaceous edge. Less about jammy fruit and more about structure, it’s a Cab for those who crave complexity over power.
