Yannick Pelletier Soif is a vibrant, natural red wine from the Languedoc region’s Saint-Chinian appellation in southern France, crafted by acclaimed winemaker Yannick Pelletier. This cuvée is made from 100% Cinsault grapes sourced from 15- to 70-year-old vines grown on schist, clay, and limestone soils. Pelletier, who established his domaine in 2004 after training under natural wine pioneer Didier Barral, practices organic and biodynamic viticulture, avoiding synthetic chemicals and fostering biodiversity with wild plants and beneficial insects. The grapes are hand-harvested and undergo carbonic maceration with native yeasts in stainless steel tanks, ensuring a fresh, fruit-forward profile. The wine is bottled unfined, unfiltered, and with no added sulfites, embodying Pelletier’s low-intervention philosophy.Soif presents a bright ruby hue with lively aromas of red berries (raspberry, strawberry), bramble, and subtle earthy, funky notes. On the palate, it’s juicy, light-bodied, and highly drinkable, with soft, velvety tannins, crisp acidity, and pure fruit flavors, finishing with a touch of minerality.
